Today’s recipe comes from one of the more popular gluten-Fried Chicken recipes on the site, Gluten Free Chickens.

Preheat oven to 400 degrees.2.
Line a baking sheet with parchment paper.3.
Place chicken pieces on parchment paper, and bake for 15 minutes.4.
Remove chicken from the parchment paper and cool completely.5.
Cut chicken into bite-sized pieces.6.
Using a sharp knife, scoop out any air bubbles from the chicken.7.
Mix the flour and baking mix together.8.
Add the egg and mix until well combined.9.
Add crumbs, and mix again.10.
Add baking powder and mix well.11.
Add chicken, and use a fork to spread the batter over the chicken pieces.12.
Spoon the batter into the prepared baking dish.13.
Bake for 25 minutes.14.
Serve warm or at room temperature.
